Ingredients


Makes: 4 servings
  • 1 can (19 oz/540 ml) low-sodium black beans
  • 2 tsp (10 ml) 3 Onion Dip Mix
  • 2 tsp (10 ml) CCB Dip Mix
  • 2 tsp (10 ml) Lemon Dilly Dip Mix
  • 1/2 C (125 ml) warm water
  • 1 avocado
  • 4 large whole-grain or corn tortillas
  • 1 C (250 ml) grated cheese
  • 1 C (250 ml) 2% Greek yogurt

Preparation


 
  • Drain and rinse beans; place in Multipurpose Steamer. Stir in dip mixes and warm water. Cover; microwave on high for 5 min.
  • Meanwhile, coarsely chop spinach. Pit avocado, then cut into thin slices.
  • Remove steamer from microwave. Uncover; using Ground Meat Separator, mash beans.
  • Spoon about ½ cup bean mixture onto centre of each tortilla. Top with avocado, spinach, and cheese. For each wrap, fold two sides of wrap over filling, then roll up tightly, ending seam-side down.
  • Serve with yogurt for dipping.

Tip


 

TIP: Warm wraps in the microwave—place back in Multipurpose Steamer and reheat, covered, on high, 20–30 sec. Or, if you have extra time, line a Sheet Pan with a Bake & Roll. Place wraps seam-side down on pan and toast for 10 min in 350° F oven.
