Makes: 12 cupcakes
  • Cupcakes:
  • 1 C (250 ml) flour
  • 1/2 C (125 ml) cocoa powder
  • 3/4 tsp (3,75 ml) baking soda
  • 3/4 tsp (3,75 ml) baking powder
  • 1/4 tsp (1,25 ml) salt
  • 3/4 C (180 ml) sugar
  • 1/3 C (80 ml) vegetable oil
  • 1 egg
  • 1 C (125 ml) buttermilk
  • 1 tsp (5 ml) vanilla
  • 1/2 C (125 ml) boiling water
  • Icing:
  • 2 Tbsp (30 ml) softened butter
  • 2 1/2 C (625 ml) icing sugar
  • 1 egg
  • 1 tsp (5 ml) vanilla
  • 2 Tbsp (30 ml) light cream

Preparation


 
  • Cupcakes:
  • Preheat oven to 350° F (175° C).
  • Lightly spray Perfect Portion Muffin Pan with vegetable oil or line with paper cups.
  • Whisk together first 5 ingredients.
  • In a small bowl, whisk together sugar, oil, egg, buttermilk and vanilla.
  • Combine wet and dry ingredients. Using Corner Spatula, stir in boiling water until batter is smooth.
  • Scoop into Muffin Pan and bake for 18–20 minutes.
  • Icing:
  • Cream butter with icing sugar. Beat in egg and vanilla, and cream to make spreadable.
